摘要:
[目的]传统的猪胴体喷淋冷却多以增湿降耗为目的,作业时间长,且实际生产未能结合胴体表面感官品质进行作业参数优选。本文在改进喷淋方式的基础上,根据实际生产需求进行模糊参数优化。[方法]以“杜长大”三元杂交猪胴体为试材,依据胴体前期干耗大的特点,改传统的固定频率喷淋模式为前期高频、后期低频的喷淋模式,以胴体的干耗、色泽(L*值和a值)、水痕为优化目标,运用正交法进行参数优化试验,在确定目标权重和隶属函数的基础上,通过模糊运算得到各试验综合评价值后,经直观分析得到最佳喷淋参数。[结果]优选参数:前期高频喷淋总时长2 h,高频喷淋间隔时长9 min,低频喷淋总时长4 h,低频喷淋间隔时长40 min,单次喷淋时长10 s,此时胴体的干耗为1.07%,L*为77.95,a为-0.05,水痕为2.16%,对应的隶属度分别为1、0.692、0.852、0.884。与传统喷淋方式相比,在同样要求达到1%降耗效果的情况下,可缩短降耗时间6 h,单次喷淋时长由60~90 s缩短至10 s。[结论]优选参数满足生产降耗需求,且表面感官品质较优,可为生产实践中的喷淋方式及其参数选取提供参考。
Abstract:
[Objectives]Increasing humidity and reducing water loss rate of pig carcass are the main purpose in the traditional process of spray chilling,which was not only time consuming but laborious. Besides,working parameters were not selected via the comprehensive evaluation that combine water loss rate with the surface’s sensory quality of pig carcass. In this study,parameters optimization was carried out by fuzzy theory in accordance with the production demands,which was on the basis of the improved spray method. [Methods]Pig carcasses of Duroc×Yorshire×Landrace(DYL)were used as test materials. Spray method of high-frequency in early stage and low-frequency at the following stage was adopted instead of traditional fixed-frequency way,since water loss rate decreases gradually in the chilling process. Water loss rate,meat color(L* and a value)and water traces were taken as pursuing indexes. With the orthogonal experiment results,comprehensive evaluation values of the trials could be obtained by fuzzy operation based on the determination of weights and membership function of these indexes. [Results]Total time of spray chilling with high-frequency of 2 hours,interval time of high-frequency spray period of 9 minutes,total time of low-frequency spray chilling of 4 hours,interval time of low-frequency spray period of 40 minutes and single spray time of 10 seconds were the optimized parameters with the water loss rate being 1.07%,L* being 77.95,a being -0.05 and water traces being 2.16%,of which the corresponding membership degree was 1,0.692,0.852 and 0.884 respectively. 6 hours of spray chilling time could be saved if 1% water loss rate is required. The single spray time was shortened from 60-90 to 10 seconds compared with traditional ways. [Conclusions]The optimized parameters satisfied the demand of reducing economic loss,and the sensory quality of the carcasses’ surface was better. The results are expected to provide references for the way and parameters selection of spray chilling.
