摘要:
测定国内主要地方品种黄牛及其改良牛共 362头的活体与胴体指标并进行相关分析 ,发现剪切力值与胴体长、年龄、胴体重及眼肌面积的相关性显著 (P <0 0 5 )。以剪切力值为因变量 ,以所有测定指标为自变量进行线性回归分析 ,以期找出能够精确预测剪切力的线性模型。结果表明 ,地方品种黄牛及其改良牛牛肉剪切力值的方程决定系数较小。因此 ,只能在一定显著性水平上通过年龄与大理石花纹等性状预测牛肉嫩度
Abstract:
Three hundred and sixty two beef cattle including yellow cattle and their crossbreeds(with simmental or limousin)were slaughtered and some live and carcass characteristics were measured. The correlation analysis showed that the shear force had significant correlation with the age, carcass length, carcass weight and rib muscle area( P <0 05). Further analysis of linear regression using backward method was made in order to find a model which can predict the shear force accurately. The result indicated that there were no suitable linear models which can be used to predict the shear force of yellow cattle and their crossbreed. Nevertheless in a certain degree the tenderness could be predicted by the age and marbling.
